The center hole is for buttons with center LEDs to illuminate the button. The LED must be mounted on the back side of the board. If it is soldered to the same side of the board then the dome can hit the solder when pressed which would be a big problem!
Cross shape domes can be used to replace round domes.

Metal dome switches come in many sizes, shapes and gram force. The gram force is how hard it needs to be pressed to activate and isn't too important for most applications. Some dome switches have center dimples or holes. Dimples tend to make a better contact with a light button press. Holes are typically for center light LEDs to shine through.
If you need a special pattern of domes, please contact me. It's easier to place a single sheet of dome switches than individually. Depending on the application, there may be no charge or even cheaper than buying individually.
